Recipe: "White trash" Ambrosia

You are guaranteed to fall in love with my WTPS - this is, truly, one case where you should not let looks deceive you.

It's green - it's fluffy - it jiggles.  I'll be the first to admit that my WTPS (white trash pistachio salad) is hardly the epitome of beauty; in fact, it's downright ugly.  But what it lacks in appearance, it makes up for in flavor.  Imagine melted, fuller-bodied pistachio ice cream.

Would you believe that my WTPS was the most popular item at my Thanksgiving table?  Trust me when I say that you will *love* this sweet side dish as much as me and my guests!

*Note: for maximum flavor, this recipe should be made 24-hours in advance of desired service*

Ingredients:

Serves 15

  • 1 20oz. can crushed pineapple, with juice

  • 1/3 cup chopped pistachios

  • 1 box (3.4oz) JELL-O Pistachio Flavor Instant Pudding

  • 12 oz. whipped cream

  • 1 bag (10.5 oz) miniature marshmallows

  • 12 oz. cottage cheese

  • 2 drops of green food coloring

Method:

  1. In a large mixing bowl, combine all ingredients. 

  2. Stir until everything is evenly blended/distributed. 

  3. Refrigerate for 24-hours prior to serving.
